Ingredients:
-
8 thrushes or black birds
- fresh myrtle
- plenty of salt

Pluck the thrushes without removing the entrails. Put the birds into a saucepan with water and myrtle. When done, drain and salt the birds abundantly. Tie the birds together in bunches and wrap their heads in a sprig of myrtle. The Taccula is made up of 8 birds. Otherwise, the birds can be put among the sprigs of myrtle rather than tying them. Leave them to stand a few hours before eating. Do not eat the beaks and stomach. Thrushes eat myrtle and they used to be cooked when the myrtle bloomed. Since bird catching has been outlawed, quails, which are sold in markets, are used instead, but the taste is completely different and the quails' entrails must be removed before cooking.
